After hand harvesting at peak ripeness, the cherries undergo an 80 hour anaerobic fermentation in oxygen free bags, amplifying its fruit forward intensity. Expect a boozy, rose like floral quality layered with deep notes of cherry and ripe plum. This lot, produced by Ancelmo Chinchilla and milled at Katarte, is both vibrant and heavy.
